Having the children at home for the whole 6 weeks holiday is hard work, not only finding them some affordable summer activities to get up to, but also feeding all the children every single meal for 6 weeks is taxing on the brain and budget.

I decided to take my weekly shopping trip to Morrisons, not only with recipe cards from MSavers in mind, but also to think up a little stuff of my own using the extensive range available. MSavers have done a fantastic job of coming up with summer recipes using the Msavers range, for picnics, bbqs and also treats too.  One of the favourites of both the children and hubby is Cheat’s lemon drizzle loaf. The kids and hubby both adore cake, it’s seen as a real treat in our house so watching their smiles is even better when it costs me just 90p to make it!

Ingredients:

  • 2 x packets of M Savers Sponge Mix
  • 2 x eggs from store cupboard
  • Water
  • 4 x tablespoons of M Savers Lemon Curd
  • Juice and zest of 1 M Savers Lemon
Method:
  1. Preheat the oven to 200°C Line a one litre loaf tin with grease proof paper. Mix up the cake mix as instructed on the packet using the eggs and water. Stir two tablespoons of lemon curd into the cake batter.
  2. Pour the cake mix into the tin and bake for 35 to 40 minutes until the centre of the sponge springs back when pressed with your fingertips.
  3. Remove from the oven and repeatedly pierce the top with a kebab skewer.
  4. In a bowl, mix together the leftover lemon curd and lemon juice and zest. Pour over the cake and allow to cool in the tin.
It really is as simple as that, and even me, who is not blessed in the kitchen can make this easily! It also impressed the mother in law when I served it up to her at our picnic, she is a keen baker and was impressed with my cake. <insert smug face here>
I also found some other MSavers products which I thought the children would love. Perfect for Al-Fresco dining with the little people. I simply take a big blanket outside and spread out what there is and let them pick themselves.
For instance MSavers wraps are just 67p a pack. The kids love filling them themselves from the bowls of lettuce, sliced tomato, grated cheese (£2.13 for a massive bag!), and ham. It’s also a great way to get them eating more of their 5 a day too.
For dessert, seeing as it’s summer, nothing is loved more than an ice cream, that is apart from an ice cream sundae! I bought the MSavers Vanilla Ice Cream for  and let the kids go wild filling their bowls with scoops of ice cream, strawberries, blueberries and a cheeky little chocolate flake too!
